Making Dinner Fun For Kids With Spring Rolls!

 

Good morning! Many of you probably already know that I’m always trying to come up with creative ways to get Syd to eat and enjoy her veggies. Well this weekend I came up with a way to get her excited about eating raw veggies, including salad. We had tons of fun making spring rolls!

I filled the table with fun plates and bowls of carrots, rice, salad, chicken, and boiled eggs.

Sydney’s Alice in Wonderland Birthday Party

 

Happy Monday! I hope everyone enjoyed their weekend. We had a blast celebrating Sydney’s third birthday with  friends and family in Wonderland! Sydney and I worked on decorations all last week, and everything came together nicely. To set up the party we brought an old dining set out onto the patio. Surrounded by paper lanterns and tons of flowers, this became the perfect setting for the Mad Hatter’s Tea Party. And, she is super lucky her daddy braved the heat and dressed up so she could have Mad Hatter himself at her party! Continue reading

Lunch Muffins, Getting Kids to Eat Veggies

 

We still struggle with Sydney and getting her to eat veggies. Chopping up some broccoli and sneaking it into her mac n’ cheese never fails, but I am always trying to come up new ideas. She never turns down muffins or cupcakes, so I decided to try and make some veggie muffin cups for lunch the other day. And it worked, she loved them! I just filled the muffin tins with dough; you can use puff pastry, crescent roll, or really any other kind of dough. I then filled them with a concoction of different veggies and added a couple eggs to hold it all together. Filled the cups, and popped them in the oven at 350 for about 15 mins. I have to admit, I quite liked them as well. They are super easy, and you can use whatever you can find in your fridge and cupboards. Get creative! Continue reading

Quick & Easy Olive Tapenade Recipe

 

Yesterday was certainly a fun and productive day, especially in the kitchen. We made a fun lunch, baked, and even played around with some homemade slime. I’ll be posting the slime recipe later this week! Any how, today I feel as if the craziness from the weekend is finally catching up with me.
