Woohoo! So happy it’s Thursday, Cola is feeling better, and the weekend is nearly here! Yesterday Sydney and I spent some time in the kitchen and baked a yummy summer treat. Jello Poke Cake and Strawberry Pretzel Dessert are two of my summer favorites. I found myself craving both, and so we combined the two and made a hybrid. It’s already half gone! Here is the recipe:
Ingredients:
3 cups pretzels
4-6 tablespoons butter, melted
2 tablespoons sugar
cake mix, or your own recipe
jello
pudding
First, crush the pretzels and add to a large bowl. Mix in the melted butter and sugar, and then firmly press pretzel mixture into the bottom of your pan.
Now, make your cake batter, and pour it on top of the pretzel crust. Bake according to directions.
Let the cake cool slightly, then use a skewer or chopstick to poke holes in the cake.
While the cake cools, prepare the jello according to the box directions. Let the jello set just enough to get a thick consistency, but not yet firm. Pour the soft jello over the top of the cake, and gently spread, pushing it down into the holes.
Prepare your pudding, and use it as a frosting to top the cake. I used cheesecake flavored instant pudding. Yuuuummm.
Top slices with a little fresh mint or strawberries and enjoy! Awhile back I made Jello Poke Cupcakes with Lemon, I think those would also benefit from a pretzel crust. Hmmm… I may have to make them again soon. But now time to go eat some more cake!
