Good morning! I hope everyone had a fabulous weekend. We certainly did, and were sad to see nana leave yesterday. To cheer us up, I think we’ll make these yummy jello poke cupcakes again (we made them last week for the first time).

They are so easy to make! Get a box of cake mix, or use your own recipe, and follow the instructions. Add to it the zest and juice of 2/3 of a lemon. Reserve the rest of the lemon for later. Make the cupcakes according to the box or your recipe. When done, take out of the oven and let cool. While they are cooling, make a box of instant jello according to it’s directions, but add ice cubes instead of cold water. This will help the jello set up quicker. If there are ice cubes that don’t seem to be melting, fish them out and discard. You want the jello to still be a liquid, but have a thick consistency. Now, using a skewer or chopstick, poke holes into each cupcake. Use a spoon to pour jello onto each cupcake, and gently smush it into the cupcake with the back of the spoon. Repeat as necessary until it looks like your holes are filled. Pop cupcakes in the fridge. Now onto the frosting. I did a cream cheese frosting. You can use a store bought or make your own, and then add to it the zest and juice from the remaining 1/3 of a lemon. Whip. Add to a piping bag, and top off your cupcakes with this fresh and yummy frosting. A little fresh mint makes these cupcakes extra yummy! Enjoy!
